A few years ago I was diagnosed celiac. While you are likely familiar with that term, it was news to me that celiac is an auto-immune disease. Essentially, when I ingest gluten my body treats it as a perilous enemy and goes on the attack. This causes significant internal damage and greatly increases the risk of developing cancer. The only known response is to avoid gluten - which if love you bread and pasta like I do...was really devastating. I've spent the last few years learning how to make my favorite foods gluten-free and while this totally doesn't fit with politics and business I figured a one-stop shop to share recipes I love here just helped to keep things simple. Again, this website is just about sharing the things that make me me and being celiac is definitely a big part of being me.
